Tone It Up Pumpkin Pie Bars - - Pie: vanilla Tone It Up Protein, pitted dates, cinnamon, pumpkin spice, salt, pumpkin puree, unsweetened coconut milk, Crust: oats, ground (or oat flour), pumpkin seeds, coconut oil, maple syrup, salt, coconut oil spray, Preheat oven to 350 degrees.; Grease a pie tin with coconut oil spray.; Place oats (or oat flour) and pumpkin seeds in a food processor and grind into small pieces. Pour in a mixing bowl and add a pinch of salt. Stir in melted coconut oil and maple syrup. Press down into the bottom of the greased pie tin and bake for 10 minutes.; In a food processor, chop dates with 1 Tbsp. of water. ; In a medium mixing bowl, combine pie dry ingredients. Add wet ingredients, then fold in dates. Pour mixture over crust evenly. Bake for 35-40 minutes. Remove from oven and let cool for 30 minutes.; Place in the fridge for 6-8 hours or overnight to set.
