TIU HQ FAVE ~ Avocado Lentil Salad - <p style="text-align: center;">Inspired by one of our favorite salads from Le Pain Quotidien! We seriously get this ALL the time!! It's light and crunchy, but still keeps you satisfied until dinner time! Plus, it's completely <a href="https://my.toneitup.com/pages/nutrition-plan" target="_blank">TIU Nutrition Plan</a> approved!</p> - Lentil Avocado Salad: brown lentils, cooked, carrot, shredded, chopped radish, fennel, chopped, arugula, sunflower seeds, unsalted & shelled, avocado, lemon slice, garbanzo beans, Lemon Dijon dressing: lemon, juiced, shallot, diced, dijon mustard, honey, olive oil, red wine vinegar, Combine all of the ingredients for the dressing in a food processor. Pulse until well combined. This makes 4 servings! Save the extra dressing for up to a week in a covered container in the fridge. ; For the salad, combine all ingredients on a plate or in a bowl. Toss with the 1 Tbsp of the lemon dijon dressing then top with a squeeze of lemon!; - <p style="text-align: center;">LOVE this salad!! It's light, crunchy, and refreshing!
