Apple Cinnamon Muffins

Ingredients:

2 Cups white Whole wheat flour or whole wheat pastry flour
 - 
1 Tsp Baking powder
 - 
1 Tsp Baking soda
 - 
1 Scoop Tone It Up Protein Powder - vanilla flavor
 - 
1 Egg
 - 
1 Tsp Cinnamon
 - 
1/2 cup coconut sugar
 - 
1 5.3 ounce Container vanilla or plain nonfat Greek yogurt
 - 
1 Tsp Vanilla
 - 
2 Tbsp coconut oil melted
 - 
1 Cup Unsweetened almond or coconut milk
 - 
1 ½ Cups Apples peeled and diced
 - 
1/3 Cup Walnuts Chopped
 
Instructions:
- 
Preheat oven to 350 degrees
 - 
In a bowl, combine the flour, baking soda, baking powder, TIU protein powder, and cinnamon.
 - 
In a separate bowl mix together the egg and the sugar. Then once combined, add the greek yogurt, vanilla extract, coconut oil, and the almond milk
 - 
Slowly add the wet ingredients to the dry until combined – do not over mix
 - 
Add the apples and walnuts and fold them into the batter
 - 
Prepare a 12 cup muffin pack by spraying it or using liners
 - 
Divide the batter into 12 cups and fill the pan
 - 
Bake for 18-20 minutes or until a toothpick comes out clean
 -
