Apple Cinnamon Muffins

  1. 2 Cups white Whole wheat flour or whole wheat pastry flour

  2. 1 Tsp Baking powder

  3. 1 Tsp Baking soda

  4. 1 Scoop Tone It Up Protein Powder - vanilla flavor

  5. 1 Egg

  6. 1 Tsp Cinnamon

  7. 1/2 cup coconut sugar 

  8. 1 5.3 ounce Container vanilla or plain nonfat Greek yogurt

  9. 1 Tsp Vanilla

  10. 2 Tbsp coconut oil melted

  11. 1 Cup Unsweetened almond or coconut milk

  12. 1 ½ Cups Apples peeled and diced

  13. 1/3 Cup Walnuts Chopped


  1. Preheat oven to 350 degrees

  2. In a bowl, combine the flour, baking soda, baking powder, TIU protein powder, and cinnamon.

  3. In a separate bowl mix together the egg and the sugar. Then once combined, add the greek yogurt, vanilla extract, coconut oil, and the almond milk

  4. Slowly add the wet ingredients to the dry until combined – do not over mix

  5. Add the apples and walnuts and fold them into the batter

  6. Prepare a 12 cup muffin pack by spraying it or using liners

  7. Divide the batter into 12 cups and fill the pan

  8. Bake for 18-20 minutes or until a toothpick comes out clean

  9. Leave the pan to cool for around 3 minutes on a wire rack
