We’re sharing some of our favorite simple recipes for grilling, fresh side dishes, and delicious dessert and cocktails. These are all remarkably easy to put together, so you can take the stress out of prepping and spend more time with your loved ones.

Quinoa Salad Recipe
Makes 4 servings
INGREDIENTS
- 1 cup cooked quinoa
- 2 celery stalks, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 5 green onions, diced
- 1 cucumber, diced
- 1/2 cup pine nuts
DRESSING
- 1/4 cup Greek or almond milk yogurt
- 1 lemon, juiced
- 2 Tbsp. fresh dill
- 1/4 tsp. garlic powder
- Pinch of salt
DIRECTIONS
- Toss all of the ingredients for the salad in a large bowl until well combined.
- In a smaller bowl, add all of the ingredients for the dressing and whisk to combine.
- Drizzle over the quinoa salad and toss to combine. Store in the fridge until ready to serve.
Grilled Sliders Recipe
Makes 1 serving
INGREDIENTS
- 1⁄4 lb ground meat (turkey, chicken, or lean beef) or your favorite veggie burger
- 3 slices yellow onion 1⁄4 cup sprouts
- 1⁄4 avocado
- 1⁄4 cup fresh corn
- 3 kale leaves
- 3 crimini mushroom caps, stems removed, or 3 baby bella mushrooms (for sliders)
- Pinch of salt and pepper Coconut oil spray
- TIU approved condiments (optional)
DIRECTIONS
- Form three small patties with protein and sprinkle with salt and pepper.
- In a pan over medium heat, spray the coconut oil spray and add the patties. Cook for 5 minutes on each side, or until cooked all the way through. You can also cook these on an outdoor grill!
- Lay out the mushrooms and add the cooked sliders and remaining ingredients to each one. Top with mushroom cap.
Grilled Chicken Skewers Recipe
Makes 4 servings
INGREDIENTS
- 4 chicken breasts, 6 oz. each, cut into 1 inch cubes
- 1 bunch fresh basil
- 1 red onion, cut into big pieces
- 2 zucchinis, cut into big pieces
- 2 bell peppers, cut into big pieces
- pinch of salt
- 4 tsp. olive oil
- 4 wooden skewers, soaked in water for at least 30 minutes before use
DIRECTIONS
- Preheat the grill to medium.
- Add each ingredient to the skewers. Drizzle olive oil and sprinkle salt. Put on the grill and cook for about 6 minutes on each side, or until the chicken is fully cooked.
Three Bean Salad Recipe
Makes 3 servings
INGREDIENTS
- ½ cup cannellini beans
- ½ cup garbanzo beans
- ½ cup kidney beans
- ¼ cup diced celery
- 2 Tbsp. chopped red onions
- 2 Tbsp. chopped cilantro
- 2 Tbsp. chopped rosemary
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. olive oil
- Pinch of salt and pepper
DIRECTIONS
- Combine all ingredients in a bowl. Mix and enjoy!
Quick Guac Recipe
Makes 4 servings
INGREDIENTS
- 1 avocado
- 1⁄4 cup red onion, diced
- 1⁄2 jalapeño, diced
- 1 lemon, squeezed
- Pinch of salt
DIRECTIONS
- Combine all ingredients in a bowl and mash to combine.
- Serve with your favorite sliced veggies (we love cucumbers, bell peppers, tomatoes, and celery)!
Watermelon & Lime Creamsicle Recipe
Makes 6 servings
INGREDIENTS
- 1 scoop vanilla Tone It Up Protein
- 8 oz. coconut water
- 5 oz. plain or almond yogurt
- 2 cups watermelon juice 1 lime, zest and juice
- 1 Tbsp. honey or brown rice syrup
DIRECTIONS
- Add all ingredients to a high-speed blender and blend until smooth.
- Pour into popsicle molds and freeze for at least 4 hours or until solid.
Watermelon Sangria Recipe
Makes 6 servings
INGREDIENTS
- 1 bottle pomegranate kombucha
- 1 bottle red wine
- 2-3 cups blended watermelon juice
- 1 cup sparkling water
- Mint
- Watermelon slices
DIRECTIONS
- Combine all ingredients except mint and watermelon slices in a pitcher and mix.
- Add mint and watermelon slices when serving.
