Sweet Potato Noodles in Maple Cashew Sauce
makes 4 servings
Ingredients
3/4 cup cashews, soaked in water for at least 2 hours
1/2 cup water
1/2 tsp. sea salt
1 Tbsp. pure maple syrup
1 clove garlic, minced
1 Tbsp. avocado or olive oil
1 cup broccoli florets
4 small sweet potatoes, spiralized
Salt and pepper to taste
Optional garnish: paprika, fresh basil and toasted cashew
Directions
1. Place soaked cashews in a high-speed blender. Add water, salt, maple syrup, and garlic. Blend until smooth and creamy.
2. Heat oil in a large skillet over high heat. Add broccoli and season with salt and pepper. Toss to coat. Cover pan for about 3 minutes to help cook the broccoli. Remove lid and add the sweet potato noodles. Season again with salt and pepper and toss in the pan for about 6 minutes, until just tender.
3. Lower heat to low and add the sauce to the pan and toss to combine. Add a little water if the sauce gets too thick. Season with salt and pepper and a drizzle with olive oil. Enjoy!
