Chocolate Beet Mini Muffins
makes 24 mini muffins (serving size is 3 mini muffins)
Ingredients
1 scoop chocolate Tone It Up Protein
1/2 cup unsweetened cacao powder
1 cup oat flour
1/4 tsp. sea salt
1 1/2 tsp. baking soda
2 eggs
3/4 cup beet puree
1/4 cup coconut oil, melted
1/4 cup maple syrup
1/4 cup unsweetened almond milk
1/3 cup chocolate chips (optional)
Coconut oil spray
Directions
1. Preheat oven to 350.
2. Combine all ingredients in a food processor or blender until smooth.
3. Spray mini muffin tin with coconut oil. Add muffin mixture.
4. Bake for 20-25 minutes. Store in the fridge for up to 5 days.
